His culinary philosophy is rooted in showcasing local, seasonal ingredients and celebrating the expertise of regional farmers, producers, and artisans.
With experience gained in some of Ottawa’s finest restaurants, he has developed a strong command of culinary techniques and a deep understanding of the craft.
His specialty lies in mastering the techniques of French cuisine, which he reinterprets through a contemporary lens to showcase local terroir and seasonal ingredients.
Today, he serves as Head Chef at Élise, located in Ottawa’s Westboro neighbourhood, where he offers a refined and creative cuisine inspired by French culinary traditions.
Through an ever-evolving tasting menu, he offers a refined cuisine that celebrates Canadian terroir while drawing inspiration from his Acadian and Franco-Ontarian roots.
Each dish is thoughtfully crafted to tell a story, evoke emotion, and deliver an authentic gastronomic experience, where the ingredient itself always remains at the heart of the creation.
