Cranberry Orange Bread

Ingredients:                   

2 cups all-purpose flour

1 cup granulated sugar

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh cranberries , coarsely chopped

Zest of 1 orange

3/4 cup freshly squeezed orange juice (about 2 large oranges)

1/4 cup vegetable oil

1 large egg

1 teaspoon vanilla extract


Instructions:

Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper.

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Stir in the chopped cranberries and orange zest until evenly distributed.

In a separate bowl, whisk together the freshly squeezed orange juice, vegetable oil, egg, and vanilla extract until well combined.

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

Pour the batter into the prepared loaf pan, spreading it evenly.

Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Remove the bread from the oven and allow it to cool in the pan for 10 minutes. Then, transfer the bread to a wire rack to cool completely.

Once cooled, slice the Cranberry Orange Bread and serve.
