Apple Walnut Salad with Maple Dijon Dressing

Ingredients :

 

4 cups mixed salad greens (such as spinach, arugula, and leaf lettuce)

1 large apple, thinly sliced (use a local variety like McIntosh or Cortland)

1/2 cup walnuts, toasted and chopped

1/4 cup crumbled feta cheese (optional)

1/4 cup dried cranberries or raisins

2 tablespoons chopped fresh parsley (optional)

 

For the Maple Dijon Dressing:

3 tablespoons extra virgin olive oil

2 tablespoons apple cider vinegar

1 tablespoon pure maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

 

Instructions:

In a small bowl, whisk together the ingredients for the dressing: olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper. Set aside.

In a large salad bowl, combine the mixed salad greens, sliced apple, toasted walnuts, crumbled feta cheese (if using), dried cranberries or raisins, and chopped parsley.

Drizzle the dressing over the salad and toss gently to coat everything evenly.

Serve immediately as a refreshing side dish or add grilled chicken or tofu for a complete meal.

 

This salad combines the crisp sweetness of local apples with the earthy crunch of walnuts, tangy feta cheese (optional), and the delightful sweetness of dried cranberries or raisins, all tied together with a delicious maple Dijon dressing. Enjoy!
